Ingredients
1 x large Zucchini, grated
1 x Tablespoon Coconut Flour
2 x Eggs, beaten
Himalayan Rock Salt, to taste
Cracked Pepper, to taste
Grapeseed Oil (for frying)
Method:
Place grated zucchini, coconut flour, beaten eggs and seasoning in a large mixing bowl and stir to combine well.
Heat a non stick frying pan over medium heat.
Place a small amount of oil in the pan.
Spoon the zucchini mixture into the hot pan (depending on the size you want to make, for little bite sized fritters, use a tablespoon or for larger fritters as in the picture, use a 1/4cup measure). Mixture should sizzle when you put it into the pan.
Cook on one side for approximately 3-4mins (until golden).
Flip and cook on other side until cooked the same as the first side.
Repeat with the remaining mixture until all used.
Makes 4 x large patties (or 12 mini patties)
