Apple and Cinnamon Bread



  • Ingredients

  • 1/3 cup brown sugar
    1 teaspoon ground cinnamon
    2/3 cup white sugar
    1/2 cup butter
    2 eggs
    1 1/2 teaspoon vanilla
    1 1/2 cups plain flour
    1 3/4 teaspoons baking powder
    1/2 cup milk
    1 apple, peeled and chopped

    Method

    Step 1
    Preheat oven to 180 degrees and grease a loaf pan.
    Step 2
    Mix brown sugar and cinnamon together and set aside. Beat white sugar and butter together until smooth and creamy. Beat in eggs until incorporated, add vanilla extract.
    Step 3
    Stir flour and baking powder into creamed butter mixture. Mix milk into batter until smooth.
    Step 4
    Pour half the batter into the prepared loaf pan. Next add half the apple and half the brown sugar cinnamon mixture. Lightly pat apple mixture into batter. Pour the remaining batter over apple layer. Top with remaining apples and brown sugar mixture. Lightly pat apples into batter then swirl apple and sugar mixture through with a spoon/skewer.
    Step 5
    Bake for 30-40 minutes or until skewer comes out clean.
