baked vegan bacon rolling pork
Ingredients:
- 2 pounds pork
- 1 clove of garlic
- 2 onions
- 150ml dry white wine
- 2 colorful peppers
- 1/2 pound spinach
- 1/4 pound feta cheese
- 1/2 pound bacon
- 2 large sheets of bay
- salt and pepper
- olive oil
- bay leaves, thyme to ganish
- arugula for the salad [optional]
Instruction:
- Divide pork into two equal pieces. Split follow their entire length, so that you get two slices and flat. Season with salt and pepper. Cut onions and peppers into small pieces. Cook on low heat. Add bacon, spinach, spices. Stir occasionally, about 25 minutes. Allow to cool, add feta cheese. Cover each muscle slice with a little olive oil and place half of the composition.After filling, carefully roll sliced meat, not too tight, then bind with string (or long toothpicks special rolls).
- Preheat oven to 200 degrees. Put the pork in oven tray with a little water and oil. Add garlic & baked for about an hour, check it, turn it, add the wine. Continue to bake it another 60 minutes on low heat.
- Serve with baked potatoes and arugula salad, decorated with fresh thyme.
