1 ripe mango
1/4 large onion
a bunch of fresh cilantro
2 Roma tomatoes
1 small lime or lemon
1 tsp apple cider vinegar (optional)
3/4 tsp salt
how to:
Cut your mango and dice it into couple small pieces. To cut your mango, slice parallel to the seed on the wide flatter side of the fruit. Make several vertical slices followed by several horizontal slices into the flesh. Push the skin up into the flesh, thereby fanning out the fruit. You can then slice off your diced mango directly into your bowl.
Finely dice your tomatoes and onions. Add these to the bowl with the mango.
Juice your lime/lemon and add the juice, cilantro, apple cider vinegar (optional) and salt to the bowl of mango salsa mixture.
Mix your mango lime salsa mixture well. Cover the bowl and let stand at room temperature for at least 30 minutes.
When the mango lime salsa has juiced up, mix again thoroughly and serve with your favorite meal.
